  • During the thawing process if you have not made the filling, now would be an optimal time to get it started

Once thawed, sprinkle baking soda on baking mat and give the dough a quick knead and divide into 8-10 balls depending on how big you want the end product to be
Let sit for 10 minutes to double in size

Add one table spoon of your filling in the middle or on one side and close

  • This part can get messy depending on how thin or thick your filling is

Continue until all buns are filled
Let sit for 5 minutes

Put the steam plate into the pot and cover until the water is just barely on the steam plate, and put down your steam friendly material on top

  • Don't forget to wet your steam friendly material first

Cover the pot and let boil until the steam is steady
Using the tongs put 3-4 buns into the pot making sure they are spaced apart.
Let steam for 15 minutes

Tricks
- Letting the steam buns overflow a little but to get the outside with filling helps to keep them moist after steaming and infuses some sweetness to the outside itself.
