Easy Spanish Rice by Custom Taste
 For quick dinner for those busy nights this is a great recipe to turn to. It is super easy to prepare and it does need constant baby sitting. Not to mention that most of these ingredients can be found in most kitchens as wells substituting is super easy. So keep this around for those extra busy days and nights.

Shopping List
  • 1 Cup Uncooked Rice
  • 1 Cup Broth, Stock
  • 1 Cup Water
  • 1 TBSP Tomato Paste
  • 1 Cup Diced Tomatoes*
  • 1/2 Can of Corn
  • 1/4 Cup Diced Onion
  • Spices
  • 1 TSP Oregano
  • 1/4 TSP Cayenne
  • 1/2 TSP Cumin
  • 1/2 TSP Chili Powder
  • Pinch Black Pepper and Salt
  • 1 TSP Oil


Hardware
Measuring Cup, TBSP, and TSP
Skillet w/ lid
Medium Mixing Bowl
Stir Spoon
Strainer

Time 35 Minutes
Prep 15 Minutes

Yield About 3 Cups

Time To Get Cooking!!!
Rinse your rice and strain until the water becomes clear
Soak your rice in the mixing bowl for 15 minutes
While your rice is soaking dice up your onions and tomatoes
Easy Spanish Rice by Custom TasteStrain your half can of corn and rinse to get any extra sugar or salt off
In the small mixing bowl blend your spices together
Once your rice is done rinsing, put into strainer and let drip while your skillet heats up
Put your skillet on the stove on medium high and add your oil
Easy Spanish Rice by Custom TasteWhen your oil is shimmering or is runny toss your rice in
Sauté rice for about 6 minutes to 8 minutes until it begins to look fluffy and is drying out
Add your broth, water and tomato paste to the rice and stir together
Place lid on skillet and let simmer for 10 minutes
Easy Spanish Rice by Custom TasteAfter 10 minutes remove lid and stir around to make sure the rice is not sticking
Stir in the diced tomato, onion, and corn
Place lid back on for additional 5 minutes
Remove lid and stir in spices
When spices are throughly stirred in remove from heat
Let sit for 5 minutes before serving

Storing and Reheating
Store in airtight container in the fridge for up to 1 week. We do not recommend storing the freezer as sometimes rice can end up mushy or stick when it is thawed.

Tricks
-We used canned diced tomatoes because they were on hand and it turned out great! So if you do not have fresh tomatoes but you have canned go ahead and use them.
-The longer you soak the rice the faster your rice will cook and the fluffier your rice will be
