Creamy Garlic and Spinach Pasta Salad by Custom Taste

My husband loves pasta salad. Do not know why, he just does. However, like most pastas it can get pretty boring and redundant so I finally decided to jazz it up a bit. This salad is creamy, low fat and high in protein which makes it a great midday meal during a busy work day. Not to mention it is loaded wit heart friendly foods and foods that can help you maintain health and weight. You can make it on a day off and have a great lunch already prepared for the rest of the week.


Shopping List
  • 4 Cloves Garlic
  • 1 Cup Milk
  • 1 Cup Water
  • 1/2 Cup Frozen, Fresh or Canned Spinach
  • 1 TSP Olive Oil
  • 2 Cups Dry Pasta
  • 1/2 TSP Cumin
  • 1/2 TSP Rosemary
  • 1 TSP Basil
  • Sprinkle Black Pepper


Hardware
2 Pots
Measuring Cup, TBSP and TSP
Cutting Board
Knife
Strainer
Stir Spoon

Time 1 Hour
Prep 5 Minutes
Cook 25 Minutes
Yield 6 Servings

Mince your garlic cloves

Saute until you start to smell the garlic
FOREWARNING: This will go quickly so make sure you keep a close eye on it because it will burn quickly and have your milk ready to go
Once you have poured the milk also add in the water
Let simmer on medium for about 10 minutes
Creamy Garlic and Spinach Pasta Salad by Custom TasteOnce the 10 minutes are up put in the spinach and let simmer again for additional 5 minutes
After 5 minutes put in your spices and continue to let simmer on low
In the other pot salt and boil your pasta until al dente
Strain the pasta (DO NOT RINSE)
Once strained, pour pasta into the pot with the spinach and milk
Remove from heat and let cool
Once cooled toss around and set in fridge

Let rest in fridge for at least 20 minutes before serving

Serving
Serve as a stand alone meal or as a side

Storing and Reheating
Store in container in the fridge for up 1 week

Tricks
-The longer you let the pasta rest the more the flavour will be absorbed into the noodles and the creamier it will taste.
