Good For Your Heart Meatloaf by Custom Taste. A great dinner for a Valentine's night in.
 Typically meatloaf and heart health aren't seen in the same sentence. In my childhood, and i'm sure many of you can relate, my mother or grandmother would make meatloaf from fatty red meat and mix it with eggs then top it was tons of ketchup. Well, forget that recipe. This meatloaf is as friendly for your heart as you can get and still keep the flavour high and cost low. We used lean turkey to replace the red meat, spinach and flax to make sure it stays together and other heart friendly ingredients. Being very hands-off and can be made a few hours in advance it is perfect for a busy day dinner or for a very filling romantic dinner for 2. 

Shopping List
  • 1/2 LB Ground Turkey (about 85% lean or over)
  • 4 Cloves Garlic
  • 1/4 Cup Spinach
  • 1 TBSP Milled Flax Seed
  • 1/4 Cup Apple Cider Vinegar
  • 1 TBSP Honey
  • 2 TSP Tomato Paste
  • 2 TBSP Red Wine


Hardware
Mixing Bowl
Baking Dish (small)
Mixing Spoon
Aluminum Foil
Measuring Cup, TBSP, and TSP
Garlic Press
Fork
Cooking Thermometer (if you have one)


Time 1 Hour and 20 Minutes
Prep 35 Minutes

Yield 3 Servings

Time To Get Cooking!!!
Dump your ground turkey into the mixing bowl and fluff with a fork
Good For Your Heart Meatloaf by Custom TasteUsing the garlic press, press all cloves into the mixing bowl on top of the turkey
Add the flax meal and spinach into the bowl as well
Mix together with the fork until fully and as evenly combined as possible
Press into your baking dish and put into the fridge for 10 minutes
In the same mixing bowl whisk together; apple cider vinegar, honey, tomato paste and red wine
After 10 minutes pour the liquid mixture over the meatloaf and let sit in fridge for additional 10 minutes  
Pre-heat oven to 350

When your oven is at temperature remove the meatloaf from the fridge cover in aluminum foil and put into oven
Bake the meatloaf covered for 15 minutes
After 15 minutes remove the foil covering and let finish baking for 45 minute
When the 45 minutes is up remove from the oven
Now would be the time to check the meatloaf with the thermometer, simply put into middle of meatloaf and make sure it reads around 170
Let rest for 10 minutes before serving

Serving
Eat as is with veggies or as a sandwich.

Storing and Reheating
Store in a container in the fridge for up to 1 week or store in the freezer for up to 3 months

Tricks
-If you want, or need, the meatloaf to stay in the fridge longer that is absolutely suggested as long as the   sauce is over it so the meatloaf does not dry out.
