April Surprise Recipe Swap: Strawberry Scones

For my second SRS hosted by (Hungry Little Girl), my partner was Turnips 2 Tangerines. Turnips 2 Tangerines is a blog run by a Wisconsin wife, mother, daughter and more who has been involved with food through out her life. She originally started her blog as way to keep up with family, but came to love her blog (like many of us have) and it became a big part of her life. The voice of her blog is very happy, upbeat and she shares much more than just recipes. However, since this is a "Recipe Swap" i focused in on her cooking. She lists easy to follow recipes that are intriguing but not overwhelming. The one that caught my eye was her Strawberry Scones.

I have a love affair with breakfast food, who doesn't? Let's be honest here. As well as berries, so having both in the same recipe caught my eye. As many of you know I do not use eggs, butter or "grain" sugar in my baking, so this proved to be a little difficult to adapt, but I got it! I stuck as close as I could to the original recipe, and it turned out delicious. I also cut it in half since I am the only one who eats sweet breakfast foods in our house. 


Shopping List
  • 1/2 Cup and 1 TBSP Flour
  • 1 TBSP Honey
  • 3/4 TSP Baking Powder
  • 1 Flag (3 TBSP Water to 1 TBSP Flax Meel)
  • 1 TBSP Flax Meal
  • 1/2 TBSP Powdered Goat Milk
  • Pinch Salt
  • 2 TSP Orange Zest
  • 1/4 Cup or 4 Strawberries chopped
  • 1/4 Cup Water
  • 2 TSP Honey for drizzle


Hardware
Mixing Bowl
Baking Pan
Silicone Mat
Mixing Spoon
Small Bowl
Measuring Cup, TBSP and TSP

Time 33 Minutes
Prep 10 Minutes
Bake 23 Minutes
Yield 2 Servings

Time To Get Baking!!!
Preheat oven to 425 degrees
Mix your flag together in the small bowl and set to the side to gel
In your mixing bowl mix together your flour, baking powder, flax meal, powdered goat milk, salt and orange zest
After the dry ingredients are mixed together add in the honey, water, strawberries and flag
Mix until full incorporated

This will be a sticky mixture to scoop out into a rough ball onto your baking pan
Bake for 23 minutes
When time is up removed from the oven, drizzle honey on top and let cool for about 5 minutes
Cut in half and enjoy!

Reaction
The recipe is not as crumbly as a scone made with butter would be, but it as the scone texture and taste plus, it was delicious!I also could not wait to take a picture before biting into these. The scone was also not heavy so that was a plus. I actually contemplated on going for a run sense i felt well fed and energetic, but opted for getting work done. My favourite part about this recipe is how simple Turnips 2 Tangerines wrote it, so it is was easy to alter or customize. I will definitely be visiting her site some more.
