Meal Idea: Chicken and Rice Bake by Custom Taste
I meant to post this yesterday, but writing and sitting down was apparently not in my mind's plan. Instead I ended being a cleaning, cooking and Pilates freak. We have had our nutritional yeast just hanging out in our cupboard for a few months and i have gotten a cheese tooth (like a sweet tooth only cheesy) and i did not want to use real cheese so i came up with this recipe! You would not even know there wasn't any cheese in it! It is a subtle cheese taste and smell too it, plus it is super easy and hands off for those busy days or nights.

Shopping List
  • 3 Medium Chicken Breasts
  • 1/4 Cup Diced Onion
  • 1/2 Can Corn 
  • 1 Cup Mushrooms
  • 1/2 Cup Rice
  • 1/2 Cup Goat Milk
  • 3 TBSP Nutritional Yeast
  • 1/2 Cup Water
Medium Sized Skillet
Chopping Board
Chopping Knife
Measuring Cup, TBSP and TSP
Small Pot w/ Lid
Can Opener
3 Small Mixing Bowls

Time 1 Hour
Prep 30 Minutes
Cook 25 Minutes
Yield 3 Servings

Time To Get Cooking!!!
Pour your rice and cover with water into the small pot w/ lid
Meal Idea: Chicken and Rice Bake by Custom TasteCook for 20 Minutes on medium heat or until all the water is absorbed and the rice is soft
Dice up your onions and quarter your mushrooms
Mix the veggies together and set to the side
Drain and rinse the corn and set into a second bowl and set to the side
In a second bowl mix all of the spices together and set to the side with the other bowls
Heat up your skillet on medium high

Let brown (or at least cook) on each side for 2 minutes
When finished set on the plate and put into a warm area
After the rice is done remove from heat
Drain and rinse the corn and add into the rice along with the nutritional yeast and goat milk

Preheat the oven to 350 degrees
Pour the rice mixture into the skillet and smooth out
Nestle the browned chicken in the rice
Pour the 1/2 cup water all over the rice and chicken
Put into the oven for 25 minutes
When time is up, remove from oven and serve

1 Chicken breast and about 1 cup of the rice

Storing and Reheating
Store in a container with lid and reheat in microwave until warmed throughout
