May SRS: How To Make Homemade Gnocchi


For this month's Surprise Recipe Swap hosted by Hungrylittlegirl.com has to do with homemade gnocchi! I love homemade pasta and dumplings. It is always so fresh tasting (because it is fresh) and just overall beter compared to the store bought kind. So it was a no brainer when i saw this recipe for homemade gnocchi by Jennifer Sikora at jennifersikora.com. I REALLY appreciated that this recipe did not call for eggs and you could not even tell the difference. I kept with just the plain straight forward recipe but next time I will be making them a big more playful by adding spices and herbs. This is a great and easy gnocchi recipe that any beginner, or expert, would enjoy making. Jennifer is a blogger, wife and mom who has been blogging since 2007 and blogs about numerous amounts of topics, not just food and recipes, even those are the ones that I took great interest in. Obviously. She also has a wide repertoire for her recipes. So hop on over to her blog and like she says "pull up a chair and stay awhile".

Now time to get to the cooking!!! I cut the recipe in half since I was only cooking for two and it ended up being a perfect split.



Shopping List
  • 3 Small Russet Potatoes (12 oz)
  • 1 Cup Whole Wheat Flour
  • 2 TSP Coarse Sea Salt

Hardware
Ice Cream Scoop
Knife
Cutting board
Aluminum Foil
Strainer
Pot
Measuring Cup and TSP
Fork
1 Mixing Bowl

Masher
Slotted Spoon

Time 2 Hours
Prep 40 Minutes
Cook 1 Hour and 20 Minutes
Yield 2 Servings

Time To Get Cooking!!!
Set your oven to 400 degrees and prick your potatoes with a fork
Set your potatoes in the oven for 1 hour
(busy yourself or relax)
Remove potatoes, set on cutting board and cut in half
Let cool until you are able to handle
Using the ice cream scoop, scoop out the white parts from the peel into the bowl
(snack on peel because it is delicious and loaded with nutrients!)

Grab your masher and mash until smooth
Get about 1 foot of aluminum foil and lay it out on the counter
Dump the mashed potatoes on the aluminum foil and spread out
Let dry/cool completely

Once the potatoes are cool, remove from foil and dump onto a floured surface
Add 3/4 cup of the flour and the salt to the potatoes and mix using your hands
Mix (and continue to add flour) until the mixture is stuff and has the consistency of pizza dough
Roll out into 2 snakes about 1 inch in diameter

Using a knife cut into about 1/2 inch to 1 inch blocks
Put your water on the stove to boil and add 1 tsp salt
Grab your fork and roll the raw gnocchi along the backside going from the handle to the tips of the fork
When your water has come to a boil add in 1/3 of the gnocchi
Let cook for 3 to 4 minutes
Remover with slotted spoon and set in strainer over a bowl
Repeat until all gnocchi is cooked
Eat how like any other pasta

Reaction
We ate these with vegan cheezy sauce and salad and they were awesome! Very filling but did not make you feel weighed down. Mr. Custom Taste loved them, which is rare since no meat was involved. Definitely a recipe to keep in the back of mind.

  2. Honestly, I always wondered how Gnocchi was made. Thanks for the recipe. Great choice. This is my first time participating in SRS. Hope you will visit me too. I made the pancake and fruit kabobs with butter pecan syrup.
