Crazy Ingredient Challenge- Meatless Mole Tacos

For the first month of the CIC, Jutta had us pair together cauliflower and chocolate. WHAT?! Yes, cauliflower and chocolate. At first I was thinking of some sort of dessert, but I told Mr. Custom Taste about this and he came up with a great idea. Since I was meatless he suggested using the cauliflower as a faux meat of some sort, making mole and putting it all in a taco. He is quite brilliant, I know. So I give to you, Meatless Mole Tacos. 


How to Make Oven Grilled Cauli-Chik'n
Shopping List
  • 1 Cup of Cauliflower
  • 2 TSP Cumin
  • 1 TSP Chili Powder
  • 1 TSP Melted Butter
Hardware
Baking Sheet
Aluminum Foil
Mixing Bowl
Cutting Board
Sharp Knife
TBSP and TSP
Time 28 Minutes
Prep 10 Minutes
Cook 18 Minutes
Yield 1 Cup Cooked Cauliflower/ 4 Servings

Time To Get Cooking!!!
Cut up the florets into bite size pieces
Toss in bowl with spices and butter
Put in fridge for 10 minutes
Preheat oven to 350 degrees
When the oven is to temp remove the cauliflower from the fridge
Spread out onto baking sheet
Bake for 15 minutes
After 15 Minutes set under broiler for 3 minutes to give the cauliflower a nice grill flavour
Remove and let cool


How to Make Mole
Shopping List
  •  2 Cup Filtered Water
  • 1/4 Cup Unsweetened Cocoa
  • 1 TBSP Organic Unsalted Butter
  • 1/4 Cup Chopped Onion
  • 2 TSP Chili Powder
  • 1/2 TSP Oregano
  • 1 TSP Cumin
  • 1 Large Garlic Clove
  • 1/2 TSP Cinnamon
Hardware
Pot w/ Lid
Stir spoon
Measuring Cup, TBSP, and TSP
Garlic Press
Time 1 Hour
Prep 5 Minutes
Cook 55 Minutes
Yield 8

Time To Get Cooking!!!
Start by dicing your onion and pressing your garlic clove
Melt butter in your pot
Once the butter is melted add in the onion and garlic
Saute and let sweat until onions are yellow looking and slightly transparent
Add in the water and mix in the spices
Bring to a simmer
Let simmer for 30-40 minutes or until thick
Remove from stove top and let cool before serving

How To Make The Taco
Take 1 Pinto Bean Tortilla and layer in a 1/4 cup of the Cauli-Chik'n, 2 TBSP mole, veggies, a wedge of lime and any type of yougurt sauce. Roll up and enjoy!

Store altogether in a container in the fridge or in separate containers. Cauli-Chik'n is good for 1 week in the fridge and the Mole is good for 2 weeks in the fridge. Reheat until warmed throughout.

Reaction
Definitely interesting! However, yummy and filling. LG even got a kick out of them, even though he was very perplexed as to why the cauliflower tasted like chicken. The Mole is definitely something that will be kept on hand and it was nice to experience with the something other than rice or beans for a meat substitute in a taco.

  1. This sound wonderful. I have never tried Mole but have thought about it. Great way to make a meatless dish by using cauliflower.
