Bacon Stuffed Jalapenos

This is Mr. CT's favourite stuffed jalapeno recipe and he believes it is the only way bacon jalapenos should ever be made. Seriously. Even though I don't eat meat or a lot of cheese, I do make an exception for this guys.  We do not eat them often, only during special times because they are that good, and because they are a little fatty. The secret is (Mr. CT said I could revel this) is mixing bacon, and some grease, into the cream cheese. His problem with other recipes of these is that not every bite has bacon, so he created these guys. Hope you give them a try!
Shopping List
  • 4 thick slices of bacon
  • 1/2 block cream cheese
  • 4 large jalapenos

1 baking tray
Aluminum foil
Skillet
Two small bowls
Strainer

Time 1 Hour
Prep 10 Minutes
Cook 30 Minutes
Yield 8 Jalapenos
Time To Get Cooking!!!
Heat up your skillet on the oven over medium high heat
Cook up your bacon until crispy
Set the strainer over a small bowl
Pour and scrape the bacon and the grease from the skillet into the strainer
Let sit for a few minutes so the grease and bacon separate
Cut off the tops of jalapeno and then in half
Deseed with a spoon and clean well with warm water
Dry well and set off to the side
Dump bacon into a bowl along with 1/2 block of soften cream cheese
Add a few drops of the bacon grease to give it an extra bacon flavor
Mix well until smooth
Fill each jalapeno half with the bacony cream cheese mixture and set on aluminum lined tray
Set oven to 350
Bake for 20 minutes or until jalapeno soften and begin to turn brown
Line a plate with paper towels
Remove jalapenos from oven and set on paper towels
Let rest for 5 minutes before serving

Serving
1 piece is 1 serving. Serve as an appetizer or side

Storing and Reheating
Let cool and transfer to a zip top bag or storage container. Store in fridge for 4 days. Reheat until warmed throughout

Tricks
