Mr. CT is starting his healthy kick and his go to healthy meal is baked chicken with a grain and some greens. This past shopping trip we picked up some large chicken breasts at a really great price! Yesterday I cut them into serving sizes and baked them with some herbs. Even though I don't partake in eating meat that much, if at all, I know he likes it so I will cook it. The meat we get is from a very trusted grocery store that has a high standard for their meats and we always buy organic. This is a really easy recipe if you bough a lot of chicken in one go or you need a simple recipe during a recipe rut. You could even use this recipe for a casserole or soup if the recipe calls for chicken.
Shopping List
- 4 (or more) Chicken Breasts
- 1 TBSP Italian Seasoning (a mixture of basil, oregano, thyme, rosemary, marjoram, and garlic)
- 1 TSP Salt
- 1 TSP Black Pepper

Mixing Bowl
TBSP and TSP
Baking Sheet
Mat or aluminium foil
Tongs
Time 55 MinutesPrep 10 Minutes
Cook 45 Minutes
Yield 12 Single Servings (3-4 oz each)
Time To Get Cooking!!!
Mix together you spicesCut you chicken into about 3-4 oz (the size of a deck of cards)
Put the chicken into the mixing bowl and sprinkle 1/4 of the spices over it
Toss with hands or tongs
Repeat until spices are gone
Preheat oven to 375
Place chicken pieces evenly on baking sheet
Bake chicken for 45 Minutes
Remove and let cool
Serving
1 piece is equal to 1 suggested serving size. Eat however you prefer. Mr. CT usually enjoys these alone with a side salad and a serving of grains like Italian Pasta or Stir Fried Rice
Storing and Reheating
After cool store in zip-top bag in the fridge for up to 1 week or in the freezer until needed. If stored in the fridge reheat on the stove, in the oven or in the microwave until warmed throughout. If stored in the freezer reheat the same as if stored in the refrigerator but let thaw before reheating.
