Banana Nut Granola

Another way to use overripe bananas! We have been on a trail mix buying kick and an oatmeal kick. However, just eating them plain was getting a little redundant. I saw a banana getting a bit to brown for regular eating and this idea came the mind! It can cut into crumbly granola bars or crumbled up completely to be eating as a cereal! A great high energy treat.

Shopping List
  • 2 Cups Rolled Oats
  • 1 Large and Ripe Banana
  • 1/4 Cup Mixed Nuts
  • 1 TBSP Cinnamon
  • 3 TBSP Coconut Oil
  • 1 TBSP Honey
  • 1/2 Cup Almond Milk
  • 1 TSP Salt

Yield 2 1/2 Cups Granola/ 8 Servings

Time To Get Baking!!!
Preheat oven to 375
Mash bananas well
Add to pot along with almond milk, 2 TBSP coconut oil and spices
Mix together
Place on stove top with medium heat
Bring to a boil while mixing
Mix in nuts and then mix in oatmeal
When all liquid is absorbed remove from heat
Spread the remaining coconut oil onto baking dish
Transfer oat and nut mixture to the baking dish
Spread out evenly

Drizzle honey on top
Let bake for 1 hour
Remove from oven and let cool before scooping out into container

Serving
Eat as a snack, cereal or topping

Storing and Reheating
Clean and dry container or zip top bag in a dry place until gone.
