CIC: WAKE UP Veggie and Coconut Milk Blend

Another Crazy Ingredient Challenge recipe! Every month Jutta at Hungry Little Girl hosts a Crazy Ingredient Challenge. She gives us (myself and other bloggers) 2 ingredients that most would usually not think to put together. This month's was tomato and coconut, hence my veggie and coconut blend. Now for the crazy concoction. I have been on a a huge veggie kick lately so I decided to use the tomato (along with other veggies) and a can of coconut milk to make a morning blend with a kick. It has a bit of spice but it will wake you up on those sluggish morning, PLUS you get a crazy amount of good for you fiber and vitamins. So with the holidays coming up it would be a great drink to have once a week to help keep your body healthy and functioning in between all of that yummy comfort food.

Shopping List
  • 1/2 Cup Cauliflower
  • 2 Whole Tomato
  • 1/2 Can Full Fat Coconut Milk
  • 1/2 TSP Ground Cayenne Pepper
  • 1 TSP Freshly Ground Black Pepper
  • 1 Medium Celery Stalk
  • 1/4 Cup Chopped Mushroom
  • 1/4 Cup Shredded Carrot
  • 1 TBSP Dried Cilantro or Parsley ( or fresh if you got it, just use 2 packed TBSP instead of 1)
  • 1/2 Cup Green Leaf Lettuce
  • 1/2 Juiced Lemon
  • 1 Cup Water
  • Salt (to taste)
Hardware
Blender
Cutting Board
Sharp Knife
Mixing Bowl
Measuring Cup, TBSP, and TSP
Time 10 Minutes
Prep 0 Minutes
Cook 0 Minutes
Yield 2 Servings
Time To Get Drinking!!
 Chop up cauliflower, mushrooms, lettuce, and celery
Shred carrot if needed
Drop into blender
Cut tomatoes in half and squeeze the juice and insides into the blender
Chop up the tomato rind and put into blender
Open coconut milk. Make sure to get have of the cream and half of the water
Pour into blender along with lemon juice
Sprinkle in parsley, cayenne pepper and black pepper
Blend until smooth
Sprinkle in salt to taste.
Enjoy!!!

Serving
1 1/2 cups w/ 2 TBSP coconut cream on top

Reaction
It was gritty for me but I think that is because I currently only have a stick blender and now a real blender. It was still delicious and definitely woke me up 1 very early morning. The coconut cream gives it a very creamy and sweetened taste. If you have a juicer though, use that!
