CIC-Broccoli Pumpkin Pie Risotto

Shopping List
  • 1 Cup Arborio Rice
  • 1 TBSP Unsalted Butter
  • 1 Cup Milk
  • 3 Cups Water
  • 2 Cups Chopped Broccoli
  • 3/4 Cup Pumpkin Pie Filling
Stir Spoon
Mixing Bowl
Measuring Cup, and TBSP
Time 35Munutes
Prep 5 Minutes
Cook 30 Minutes
Yield 5 Servings
Time To Get Cooking!!!
Combine Pumpkin, Milk, and Water

Melt butter until bubbling
Drop in 1 cup broccoli and "stir fry" for 2 minutes or until lightly softened
Add in rice until a roasted aroma is released

Add the pumpkin mix 1/2 cup and stir until liquid is absorbed

Repeat until the pumpkin mix is gone
When adding in the last 1/2 cup add in the other cup of broccoli

Stir to heated throughout and serve

3/4 cup with 1 TSP Naturally Brewed Soy Sauce

A VERY pleasant surprise. It has become my new comfort food. It is warm, filling and very savory (especially if you add the soy sauce on top, trust me!) When we go visit my grandparents in two weeks I plan  on making this for them.  I think it is a great way to sneak in veggies as well! Just chop them up even smaller or into a puree.
