Oven "Fried" Chili Chicken by Custom Taste
If your home is anything like ours then you probably keep some form of frozen meat/non-meat in your pantry. For us, we keep chicken breasts. We buy them in a bag from our local HEB and keep them in our freezer. They honestly do not take that long to defrost so that makes them easy to prepare as well as we always have something to throw in the oven for dinner. I came up with this recipe mainly because I was craving something savory, crunchy and was really wanting something fried. What is better than fried? Oven baked! What is better than batter breading? Nuts! Okay, maybe those two thing are actually "better" but they are darn close and a whole lot less messy. No dredging through egg and flour. No breading fingers. No oily mess. No crazy clean-up! It is also low-carb but super protein filled so very friendly to any low-carb or gluten free dieters out there.


Shopping List
  • 2 Large Chicken Breasts (skinless and trimmed)
  • 1 TBSP Chili Power
  • 1/4 Cup Unsalted Mixed Nuts and Seeds
  • 1 TBSP Corn Flour
  • 1 TSP Black Pepper
  • 1 Flag (1 part Flax Meal 3 parts Warm water, let stand for 5 minutes to gel)
  • 1 Lime

Prep 10 Minutes
Cook 25 Minutes
Yield 2 Servings
Time to Get Cooking!!!
Start by mixing the flag together and set to the side to gel
Pour in the nuts/seeds, chili powder, black pepper and corn flour to the food processor

Blend until the texture of wet sand
Oven "Fried" Chili and Lime Chicken by Custom Taste
Rinse your chicken and pat until dried well
Trim and cut off any extra fat or silver skin from the chicken

Preheat oven to 400 degrees
Line baking dish with liner
Dump flag and "breading" into separate bowls
Oven "Fried" Chili Chicken by Custom Taste
Roll chicken in flag, making sure to coat well
Roll in "breading" also making sure to coat well
Lay chicken on dish and drizzle with olive oil if desired

Insert into middle rack of oven and bake for 25 minutes
Once done baking, remove from oven and let rest for 5 minutes before serving
Squeeze on lime and enjoy!

Serving
We paired it with Butter and Baked Acorn Squash and it was delicious! You can really pair it with anything, it is that great!

Storing and Reheating
Once cool place in zip top bag or container and store inf ridge for up to 5 days. Reheat until warmed throughout.

Tricks
- The "breading" will be more than needed, if you have more chicken, simply add 1 flag per 2 chicken breasts/pieces
