Meal Idea Mondays: Baked Bubble and Squeak by Custom Taste

Not too many people know what bubble and squeak is, but essentially it is a skillet casserole made of potatoes and cabbage mixed together into a sort of flat cake. Typically it is cooked on a stove-top and flipped like a pancake, however this would also mean using egg to make it stay together and I did not want to do that. Instead I omitted the egg added some more potato and baked it in the oven until it was browned. It was tasty and very filling, and is also delicious the next day! Not too mention it also can help in using any leftover mashed potatoes.

Shopping List

  • 1 1/2 Cup Mashed Potatoes
  • 2 Cups Shredded or Chopped Cabbage
  • 1/2 Cup Onion
  • 1 TSP Olive Oil
  • 1/4 Cup Water
  • 1/2 TSP Pepper
  • 1/2 TSP Garlic Powder
  • 1/2 TSP Paprika

Time To Get Cooking!!!
*If you do not have mashed potatoes on hand, make sure to get those first before continuing.*
Start by chopping your cabbage into medium sized pieces
If you have a shredding attachment or anything similar you can use that instead, the cabbage just need to be chopped and not in strips
Throw your cabbage in the bowl after it is chopped
Dice the onion quickly and throw into the bowl with the cabbage

Make sure the cabbage and onion are well seasoned
Pour the oil into your skillet and bring the stove-top to medium high

Transfer the cabbage and onions into the skillet
Sautee until the begin to soften
Add the water and cover
Let the vegetables sweat for about 5 minutes
Meanwhile, preheat your oven to 375 degrees

Once the water is gone add your mashed potatoes and turn the stove top to low
Mix the vegetables and potatoes until they are as mixed together as possible

Flatten into the skillet and put into the oven
Let bake for 20 minutes or until the top is a dark brown

Serving
Serve one slice as a side with meat and veggies

Storing and Reheating
Store in a zip top bag in the fridge for up to 1 week or the freezer for up to 1 month
