We are pretty big nerds here and March 14th was National Pi(3.14-) Day (at least for those of you who use the Middle-Endian calendar system). We are also on a health kick, so I had to figure out a way to make a delicious pie without adding tons of added sugars, carbs and fat. I hit the mark! Light and easy to eat, it was a perfect after dinner dessert and it didn't come served with a side of guilt. Plus, we love the health benefits bananas have. Enjoy!
Shopping List
- 3 Ripe Bananas (we are talking brown)
- 1 TSP Honey
- 1 Flag (a.k.a. Flax Egg)
- 1/4 Cup Milk
- 1 Package Unflavoured Gelatin
- 2 TBSP Hot, Hot Water
- 1 Pie Crust
- 2 TBSP Natural Peanut Butter
- 3 TBSP Greek Yogurt
- 2 TSP Honey
- 1/4 Cup Warm Water
- 1 TSP Baking Cocoa
Hardware
Pie Dish
Medium Sized Pot
Masher
2 Medium Sized Mixing Bowls
1 Small Bowl
Mixing Spoon
Whisk
Time 50 Minutes
Prep 5 Minutes
Cook 15 Minutes/ Rest for 30 Minutes
Yield 8 Medium Slices/8 servings
Time To Get Baking!!!
Mix together 1 TBSP ground flax seed with 3 TBSP warm water (this is how we make our flags!)
Stir the mixture and let sit for about 2 minutes or until gelled
Peel and drop your bananas into your pot
Add the milk, honey and flag
Stir together making sure everything is well mixed
Heat up mixture until it is warmed throughout
Meanwhile add your gelatin to the 2nd bowl and mix in the 2 TBSP hot, hot water
Make sure to mix well so the gelatin does not clump too much on one side
Once your banana mixture is heated throughout mix throughly into the gelatin
Set your oven to 350 and let the gelatin banana mixture stand until the oven is heated
Put your crust into the pie dish
Once the oven is ready, pour your banana mixture into the pie dish and spread evenly
Bake in the oven for 15 Minutes
Put into fridge for at least 30 minutes
Now time to make the topping!!!
This is super quick and simple so you can wait right before you serve the pie to make it.
In the 2nd bowl whisk together yogurt, baking cocoa, honey and water
Whisk until smooth
When your pie is ready, remove from fridge, cut evenly, top with topping and enjoy!

1 piece with or without topping
Storing and Reheating
Place into zip top bag and store in fridge for up to 3 days. Store in the freezer for up to 1 month

-Our pie crust was an oatmeal pie crust, look for the recipe later on!
Gonna share this with my sister who has a limited diet. She is dairy-free, but maybe can figure a way around that. :)
