March Surprise Recipe Swap: Black Bean Soup

I have recently joined the Surprise Recipe Swap(SRS) hosted by Hungry Little Girl and this is my first month. I am excited to not only share this recipe with you all but to also have been introduced the lovely blog it hails from. My SRS partner for March was Jackie at Rediscover Mom. She blogs about cooking, knitting and other skills which our mothers (or grandmothers for some of us) would use daily but yet because of the times we live in many of us never learned or have forgotten what we were taught. She has great fully homemade recipes that not only sound delicious but look delicious too as well as easy to follow instructions on how to make whatever recipe your heart desires and she has a wide variety of recipes to choose from.
March Surprise Recipe Swap: Black Bean Soup by Custom Taste

We are big bean eaters in my household so seeing a recipe for a different way to make black bean soup got me excited! Not to mention it gave me another reason to break out my trusty crock pot. I cut the recipe in half as there are only two of us to feed.

Black Bean Soup (adapted from Rediscover Mom)

Shopping List
  • 1/2 Onion
  • 1 Carrot
  • 1 Cup Celery
  • 1 TSP Red Pepper Flakes
  • 1/2 Cup Dried Beans
  • 1 Cup Broth
  • 2 Cup Water
  • 2 TSP Olive Oil
  • 1/2 TSP Cumin
  • Salt to taste
  • Pepper to taste


Hardware
Crock Pot
Cutting Knife
Cutting Board
Measuring Cup and TSP
Skillet
Mixing Spoon
Food Processor (or equivalent)
Small Pot and lid

Time 4 Hours 45 Minutes
Prep 3 hours 15 Minutes
Cook 1 Hour 30 Minutes
Yield 2 Large Servings or 4 Small Servings

Time To Get Cooking!!!
First rinse and sort your beans
Grab your pot and pour in your beans along with about 3 cups of water
Set on the stove on high
Bring them to a boil and let boil for about 5 minutes
Turn off heat, place lid on the pot and let soak for about 3 hours
After soaking, rinse your beans well and return to pot
Add broth and water
Get your immersion blender, and blend until smooth or a consistency which you find appealing
Turn crock pot on high and pour beans into it
Slice and Dice celery, carrots and onion
Heat up the olive in the skillet until it shimmers
Sautee vegetables until the soften
Add sautéed veggies into the crock pot along with spice
Allow to cook for 1 Hour and 30 Minutes in the crock pot
Serve and Enjoy!

YUM! It might not look pretty, but looks are not everything, especially when it comes to food! An intriguing creaminess and light taste. Yummy for a busy night dinner or just relaxing at home. The preparation itself was super simple and aside from waiting for the beans to soften very quick, and hands off. I added some spice to it with the red pepper flakes because we love spice, it wasn't overwhelming but if you are sensitive to spice, don't include it!   2. I too am part of SRS and love it! Great recipe. It is difficult to make soup pictures come out pretty, at least I have trouble with it. But it does sound good. Thanks for sharing.
