Bite Battles: Chewy Corn Crackers by Custom Taste
 WE LOVE CORN...which probably is not the best grain (yes grain) to love, but we are working on it. We also love dipping apparatuses, mainly because we tend to make A LOT of sauces. I also go in between churchy and chewy, Mr. Custom Taste does too. We were suppose to take these on our road trip this past weekend, but we forgot them. Don't you just loathe when that happens? Anyways, that just means we get to enjoy them for even longer and with anything now, YAY! We compared these to a popular corn chips, Fritos! Like always, we believe ours is the better one or I would not be here writing an entire post about it. They are simple to make and very hands off, plus no rolling pin required!

Shopping List
  • 1/4 Cup Corn Meal
  • 1 Cup Corn Meal 
  • 1/2 TSP Baking Powder
  • 1/4 TSP Baking Powder
  • 1/4 Cup Shredded Cheese
  • 1 TBSP Nutritional Yeast
  • 1/2 TSP Chili Powder
  • 1/2 TSP Onion Powder
  • 1 1/4 Cup Water
  • 2 Flags (2 tbsp flax meel:6 tbsp warm water)


Hardware
Mixing Bowl
2 Baking Pans
Aluminium Foil or Baking Mat
Mixing Bowl
Mixing Spoon
Measuring Cup, TBPS, and TSP
Small Mixing Bowl

Prep 10 Minutes
Cook 35 Minutes
Yield 12 OZ/6 Servings of 2 OZ

Time To Get Cooking!!!
Start off by preheating your oven to 400 degrees
Cover your baking pan with aluminum foil or a baking mat
In the small mixing bowl mix together your flags and let stand for at least 5 minutes
In the big mixing bowl mix together your cornmeal, corn flour, cheese, nutritional yeast, baking powder, baking soda and spices

Add in the water and flags
Mix together well, the mixture will resemble a thick paste
Now depending on how big your baking tray is, split your mixture in half
Spread into a relatively thin layer
Bake in the oven for 35 minutes making sure than the edges brown and it darkens

When time is up, remove from oven and let cool before tearing or cutting apart

Serving
Eat alone or with your favourite dip!

Storing and Reheating
Store in a zip top bag or air tight container in the fridge for up to 2 weeks or on on the counter for 1 week

This one is definitely a toss depending on what is most important to you. If the nutritional benefits are more important, ours would be  more worth your wild, if you are more concerns with expensive and convenience the store-bought kind would probably be more up your alley, but barely.

Tricks
-If you would like them to be crunchier simply let them bake for longer!
