This is super easy and yummy to make. All of the ingredients (minus the cilantro) are staples in our kitchen so this is an easy recipe for us to whip up for a healthy topping on burgers, salads, or tacos. It also helps to brighten up bean burger, something very important for me since eating bean burgers a lot can get kind of tasteless and bland.
Shopping List
- 1 Large Onion
- 4 Medium Roma Tomatoes
- 1 Large JalapeƱo
- 1/2 Bushel Cilantro
- 1/2 TSP Oregano
- 2 TBSP Lime Juice
- 2 TSP Vinegar
- Salt and Pepper to taste

Mixing Bowl
Cutting Board
Chopping Knife
Fork or Spoon
Handheld Juicer
Measuring Cup, TBSP, and TSP
Time 1 Hour 20 MinutesPrep 20 Minutes
Chill 1 Hour
Yield 24 Servings of 1TBSP
Time To Get Chopping!!!
Chop up the onions, tomatoes, and jalapenos into either large or small chunksOnce the vegetables are chopped add into the mixing bowl
Juice the limes into the bowl and add the vinegar
Toss altogether
Roughly chop of the cilantro and add to the bowl
Mix in the spices
Set in fridge to chill for 30 minutes to 1 hour
Remove and serve
Serving
Eat as dip or a topping
Storing and Reheating
Cover and store in fridge for up to 4 days
