Easiest Slow Cooker Recipe Ever: Salsa Chicken.


The title is no hype. In fact, I feel silly posting this, but never know who it might help.


Ingredients
Chicken (breast or thigh or both)
Your salsa of choice. I use picante because it has the best macros (for me) and we get two huge container at Costco for supper cheap. 
Extra veggies (optional, but suggested )

Hardware 
Slow cooker

Time to get (slow) cooking!

Start with a layer to four ounces of salsa on the bottom. Mainly to make sure the chicken doesn't stick or burn to the bottom as it is cooking. 
Layer chicken.
Add layer of veggies


Repeat until all the chicken and salsa is used up or you run out of room. You do want to end with salsa on the top though. 

Set on low for 6 hours if you are using a slow cooker similar to mine. If not, make sure to look up the suggested time for cooking poultry or use a thermometer to make sure the internal temperature is 165 F ( 79 C) or higher.

Store in fridge for 1 week or in freezer.
