I love tortillas! I love that you can wrap any meal up in them and have a handy no fuss meal. I have been experimenting with different way of making tortillas without using a lot of oil and fat. I have made them with black beans and pinto beans, they were good but not great and what I was looking for. Aside from being oil-free and lard-free I also wanted something quick, easy and not very labor intensive. This is by far my favourite recipe! I have made them four times already! They are super simple to, and honestly so low fat you'll be impressed. No oils or fats needed, just flour, water and a little salt. This recipe also doubles easily so no second guessing if you want to make a double batch.

Yield 18 Tortillas
Start by mixing the flour and salt together in the mixing bowl
Add hot water gradually, mixing as you go
When dough ball start to form sprinkle your rolling space with the flour
Dump the dough ball out onto your floured surface
Knead for 5 minutes
Form dough into a ball and cover with a paper towel and let sit for 15 minutes
When resting time is up being rolling dough into a long roll
For 18 medium sized round tortillas you need the roll to be at most 27 inches. More than the that the tortillas will get small, any less and they will be large. So depending on what you need roll longer, smaller or stay at 27 inches.
Starting at one end cut each piece into 1 1/2 inches
After you have rolled your tortillas cook on medium for 45 seconds each side

Storing and Reheating
Let cool and store in a zip-top bag, in the fridge for up to 2 weeks. Store uncooked dough balls in a zip-top bag in the freezer for whenever homemade and fresh tortillas are needed. Cook as normal.
