Easy Baked Chicken Breasts

Mr. CT is starting his healthy kick and his go to healthy meal is baked chicken with a grain and some greens. This past shopping trip we picked up some large chicken breasts at a really great price! Yesterday I cut them into serving sizes and baked them with some herbs. Even though I don't partake in eating meat that much, if at all, I know he likes it so I will cook it. The meat we get is from a very trusted grocery store that has a high standard for their meats and we always buy organic. This is a really easy recipe if you bough a lot of chicken in one go or you need a simple recipe during a recipe rut. You could even use this recipe for a casserole or soup if the recipe calls for chicken.

Homemade Tortillas

I love tortillas! I love that you can wrap any meal up in them and have a handy no fuss meal. I have been experimenting with different way of making tortillas without using a lot of oil and fat. I have made them with black beans and pinto beans, they were good but not great and what I was looking for. Aside from being oil-free and lard-free I also wanted something quick, easy and not very labor intensive. This is by far my favourite recipe! I have made them four times already! They are super simple to, and honestly so low fat you'll be impressed. No oils or fats needed, just flour, water and a little salt. This recipe also doubles easily so no second guessing if you want to make a double batch.

Machine Sandwich Bread

 Recently Mr. Custom Taste and I broke out our 3 in 1 panini press, grilled sandwich maker and waffle iron. Hot sandwiches just sounded right, and we ate them for a good week. So to accompany those sandwiches we obviously needed some bread to go with them.  I did not want to heat up the apartment baking bread in the oven so I also broke out the good ole bread machine. This recipe is super easy and took a few tries to prefect. It is simple, has simple ingredients and is hearty without the making you feel bloated afterwards. Start it any time of the day and have it ready for when you need it and you won't get dead armed from kneading, also a plus!

Banana Spread

I recently saw a blogger I follow talking about how she wished there was such a thing a "banana butter" because she loves mashed bananas and I thought "what?! I have doing a banana spread for ages!". I thought it was super common though so I never really bothered to share. So here it is! My Banana Spread. I usually will eat it on something, in something or by itself if I am feeling crazy. It is super yummy, and super easy to make. Plus you could freeze it and have an ice cream type treat!

Zucchini Corn Muffins

A few days ago I was really craving cornbread..BUT I forgot where my cornmeal was (woes of being ADD about organization) however I did have corn flour. After figuring out how to make something similar to cornbread with corn flour I noticed our abundance of zucchini and decided to throw some of that into the recipe as well. Sweet and savory! This little guys are great as side either covered with beans or drizzled with honey. They are easy and inexpensive to make and easy to store. Make up a batch and a quick meal ready to go in seconds.

Slow It Down Minestrone Soup

This soup is extremely hands off and great to make during a hot day. It requires little use of the stove and doesn't heat the whole house up while it is cooking. Prep the night before, start it in the morning, go out and do awesome hot weather activities and it will be ready to eat by dinner time. Using a beach towel to raise the temperature without worrying about burning anything is a great trick to ensure good melding of flavours without a burnt taste.

Bacon Stuffed Jalapenos

This is Mr. CT's favourite stuffed jalapeno recipe and he believes it is the only way bacon jalapenos should ever be made. Seriously. Even though I don't eat meat or a lot of cheese, I do make an exception for this guys.  We do not eat them often, only during special times because they are that good, and because they are a little fatty. The secret is (Mr. CT said I could revel this) is mixing bacon, and some grease, into the cream cheese. His problem with other recipes of these is that not every bite has bacon, so he created these guys. Hope you give them a try!

Coconut and Lime Bites

I made these right before going to Mr. Custom Taste's father's house for a weekend vacation and tons of grilling. Before we left I was trying to use up any fresh produce that might not last much longer. We had recently bought some coconut oil and had just a few limes left. So my "ah-ha!" moment ended me wanting to make a lime and coconut poke cake or cupcakes then finally mini-cupcakes. Well they took on a whole mind of their own. Let me just say apparently I am great making stuff that should have cheese it in cheeseless. My sister-in-law was the first to say they reminded her of a key-lime cheesecake. After that was said, everyone else started agreeing, even I didn't notice it. With summer winding down, I suggest taking this to the next BBQ. Sweet enough to please any sweet tooth and light enough to keep everyone happy.

Back from Vacation

WE ARE BACK!!!(again)
I did not realize how crazy busy our summer has been until I sat down to write this post. Goodness me! It feels like we have been going and going every since May 8th, when Mr. CT and I went down to the heart of the Texas Hill Country to meet up with my father, (new) mom and grandparents.During their time here we had a bunch or sight seeing, catching up, dinners and of course a small wedding. Almost as soon as father and new mom left we got LG for a month and a half of fun, hard and great times! Before LG's switch we started the first few days of the vacation off hanging out and playing on Lake Conroe where FIL has a beautiful house! After the switch we came back here for some well deserved time off before Mr. CT had to head back to his day job and I had to get back to mine. Don't get me wrong we had a blast! It is just nice to be getting everything back in order and getting back to a schedule. SO! The line up for my catch posts are;
