Banana Nut Granola

Another way to use overripe bananas! We have been on a trail mix buying kick and an oatmeal kick. However, just eating them plain was getting a little redundant. I saw a banana getting a bit to brown for regular eating and this idea came the mind! It can cut into crumbly granola bars or crumbled up completely to be eating as a cereal! A great high energy treat.

I had recently made some Slow Cooker Apple Pie Filling and needed something to put it in. I also needed a quick breakfast item in case Mr. CT and I overslept and he needed something to grab before dashing out the door. I say dashing because he is so very dashing :).

Left-Over Salad Breakfast Taco

One night Mr. CT and I had a large dinner salad with some leftovers. The next morning I decided to re-purpose this "dinner" salad into a breakfast taco. This is great for times when you, also, have leftover salad and do not want it to go to waste. You get a great overall nutrient boost and you save money. There is nothing wrong with using leftover for breakfast and this is a great overall healthy breakfast. Not to mention it is quick, yummy and super versatile with whatever salad leftovers you may have.

Recently I have grown tired of rice and beans into my tacos and enchiladas so I made some enchiladas with Quinoa Taco Sub. They are filling and taste exactly like taco meat. These were definitely a yummy and much needed changed from the usual meatless fillings and substitutes. Being meatless that is definitely something I try to aim for is keeping my meals new and tasty and that helps to keep my on my meatless track. So give these a try for a Meatless Monday or if you are also growing a little tired of the usually meatless food fare.

Who says the taste of apple pie is only meant for American Independence Day and the fall season. Um, NO ONE. I have been dabbling in home-made pop-tarts for Mr. CT's breakfasts and he said that after lemon filling his next most liked was apple pie. Since we had a load of apples and no lemons I decided to give it a go. This filling is super easy and does not require heating your kitchen up with an oven. It can also be used for anything. I have used in pop-tarts and in a sandwich for a sweet treat. Feel free to eat like apple sauce but the cinnamon might over power your palette, simply thin it out a little with milk or juice.

I made this quick breakfast one day after seeing my last banana get to the perfect shade of..BLACK. I love bananas anywhere from yellow with a few spots to black. For eating yellow with brown spots and for everything else brown to black. They are so much sweeter and are great for the digestive system. Our blender has been out of commission for the past 3 months, so smoothies have been out of the question. This recipe it super simple and you don't have to dirty any extra dishes AND it is super quick to drink. Try it during a busy morning or an easy after workout pick me up.

Quinoa Taco "Meat" (Soy-Free!!!)

I have been on a Tex-Mex kick in the past weeks, if you have not noticed, however I was getting tired of just plain old beans and rice. I wanted something with more texture and flavour. After a few hours, here and there, searching how to make my own "meat" at home I got a little discouraged. There are a ton of options, but all heavily dependent on soy or tofu and that was something I did not want. Eventually I found a recipe using quinoa here. She used nuts and a blender and an oven, it seemed very labour intensive. What this recipe did do was inspire the one I am sharing with you today. You only need a stove-top, pot, quinoa, some extra ingredients and you have a soy free meat sub for any of your meatless needs.

Homemade Chipolte Sauce

At our home we love anything spicy, we also go through hot sauce very quickly. After many months of having to buy multiple bottles of hot sauce a month we started buying dried peppers and looking up recipes to make out own. This is own of our favourite easy and quick recipes we have come up with. Only 2 ingredients and only 2 weeks to wait. You can also drain the liquid out after 2 weeks and use it as a soy sauce. All you would need to do is add more vinegar before pureeing your sauce!

Chicken Cheese Enchiladas

Ever since I perfected the Cheeze Sauce recipe I try to keep it on hand as much as possible. The sauce is also a great way to add cheesy flavour without the added fat or calorie associated with traditional cheese. I also love anything tex-mex. Since enchiladas are super easy to customize and no matter what you stuff them with it can all cook at the same time, so it makes it super easy for a couple like Mr. CT and myself. I can make a meatless enchilada for me and meaty enchiladas for him. If you haven't guessed this is the recipe I made for him!
