Cheeze Sauce-Revisted


You might remember a few months ago i did a vegetarian cheese using garbanzo beans. It was okay, but nothing compared to my new one! This recipe is probably one that I am most proud since starting my blog. It started out as a quick topping for potatoes and took on a life of its own once I tasted it and realized how yummy it was and how much it tasted like queso. If you are looking for what it tastes like, just like that queso you can get at Chilis just, you know, better tasting and better for you! Kid-friendly as well! Need to sneak in more veggies do this! You can't tell the difference. The carrots give it a sweetness, the potatoes give it thickness and the nutritional yeasts gives it the cheesy nutty flavour that is so yummy! Super inexpensive to make and relatively easy and quick you will be smiling with joy as others wolf this down thinking it is real queso.

For the first month of the CIC, Jutta had us pair together cauliflower and chocolate. WHAT?! Yes, cauliflower and chocolate. At first I was thinking of some sort of dessert, but I told Mr. Custom Taste about this and he came up with a great idea. Since I was meatless he suggested using the cauliflower as a faux meat of some sort, making mole and putting it all in a taco. He is quite brilliant, I know. So I give to you, Meatless Mole Tacos.

Even though I do not eat meat, Mr Custom Taste does. He also enjoys recipes that have a special flare or odd change to them. He is a big fan of Greek Meatballs. One day we had a lot of ground turkey that needed to get cooked and a lot of cilantro. So I came up with an idea to make greek meatballs but with a spanish twist! So I present to you Southern Border Meatballs! They smell great, and he even said that they tasted like greek meatballs, just with cilantro. Success!

So, as many of you may remember, being in the southwest we love spanish food fare. However since becoming a clean eater it is a lot harder to find cost effective and clean tortillas, so I have to make my own. I have made about 3 different kinds so far. This is one is my favourite for big dishes (like burritos) because they hold together and puff up deliciously.

They were quicker than baked potatoes and less fatty than sauteed as well as tasty and filling. These potatoes were even kid approved! They may not be quick, but they taste just as good the next day, so feel free to make them ahead of time when needed!

These pancakes are not only quick and easy to make but are also quick and easy to store. Making them in a container eliminates extra dishes to clean and you can get to enjoying them much quicker. They are light and fluffy as well as healthy. They are sweet enough for eat as a breakfast or dessert but savory enough to eat with beans or meat. Add some peanut butter to make a great and healthy after workout snack!

The Meatless Lifestyle 07/01/13

Happy July everyone! I hope you have taken out stock in sunscreen and fans, we probably should have. Also, RIP Google Reader, you were great to us and will be sorely missed. I am going to get into gear and really pushy myself to update everyday about the meatless lifestyle as well as get back on track with the rest of my blog. Little guy has been here for 2 weeks so it is time to get back to schedule. I think I started July off really well, so here the first day!
